It may be a plain old black-and-white Holstein, but it’s still the most famous cow in music history.

I agree. Elsie, despite being a brown cow (which, these days, who wants a brown cow?), is probably the most famous – at least, among older Americans.

Ironically, the cow’s name wasn’t actually Elsie – it was “You’ll Do Lobelia”. More info here, including the interesting tidbit that she was hooked up to a “rotolactor” – which sounds like an awful, awful experience.

Also, how about an honorable mention for Frank Zappa’s talking cow?

I couldn’t find a decent scan of this one. I don’t think the cows are supposed to be so oddly grey.

In Northern California, I think the most recognizable cow is probably Clo from Clover-Stornetta Dairy. Their pun-laden billboards were something I always loved as a kid:

And that color, for your information, is not brown and cream. It is burnt orange and white. :)
