Most of IGN’s list, I’ve watched one or two episodes and given up on those shows. I guess I should go back and give them another try.
“Most” is an exaggeration, to go into more detail:
(Made in Abyss I watched the first movie, in which nothing much happens, Jojo’s Bizarre Adventure I don’t think I even made it to the end of the first episode, Demon Slayer I made it about two episodes and couldn’t take it anymore, Mob Psycho 100 I made it one episode, Cowboy Bebop I watched the first episode, and Fullmetal Alchemist (or was it brotherhood?) I watched one episode).

It’s just another top xx list from a mainstream internet site. Of course it has a bias towards popularity. You don’t even need to comment it, at this point is as a natural as fish breathing water.

You are unequivocally wrong to have not followed through on these two.
I won’t comment on the rest of the list for omissions or incorrect inclusions, however I will absolutely state that FMA and Cowboy Bebop at the top are absolutely defensible positions and they earn them.

I do have the prior precedent of loving Samurai Champloo, so I do figure I’ll enjoy Cowboy Bebop one day too. I just need to build a better tolerance for getting through episodes I might not enjoy right away to get to the ones later where it all comes together better. I do get into those kinds of moods often, but the timing needs to be right. (It’s just more complicated nowadays because my kid is 5, and always wants command of the TV).
I thought the IGN watermark could have been a giveaway and I attached the full list anyway.
Full metal alchemist brotherhood is arguably the GOAT of anime so I won’t dispute its #1 status in any anime ranking. I thought it would have been suffice after watching the 2002 version, which itself would still be the #1 anime choice for most people. But FMA:B blew the OG away for me even if it didn’t impress me at first as I thought the first 12 episodes were pretty much the same as you’d have seen in the OG anime. I urge anyone who hasn’t yet watched the show or has quit in the early part of the show to persist until 12 episodes. That is where FMA:B diverged from the OG and hit its stride to become a much better show that will occasionally hit the audience hard with strong emotional notes.
My #2 anime will be Gintama. I enjoy comedy shows and prefer comedic anime over ones that are dark and gritty. Gintama is arguably the funniest of all. What started as a samurai finding its feet in a space aliens occupied Japan turned into a hilarious parody work much like South Park but minus the raunchiness. I binged it during the pandemic and thank goodness to Gintama life was less miserable during the lockdown.

I’ve never heard of that before. 367 episodes? I’m assuming it’s completely finished? It wasn’t until I wrote out my favorites above that I realized that so many of them still aren’t finished, which is annoying.

I was wondering why no one mentioned Gintama. It has to be the one Anime that is great both at humor and seriousness as it progresses through all its arcs.
Yes, it is a completed series. This is one of the few animes me and perhaps others who had watched it will tell you that Gintama would be one of the wildest and whackiest but memorable comedy acts you would experience. I will envy you for that if you’re going to find out what Gintama is because ever since Gintama no other TV shows had replicated the same cathartic hilarity experience for me.

Like most of lists of its ilk, it seems more a mix of “influential” and “popular” rather than “great”; of course defining “great” is a big ol’ can of worms.

I tried watching a couple episodes of Gintama and was left thoroughly un-enthused. It just felt like…I dunno, pretty typical fairly dated 90s era anime.
Obviously, at 200 episodes, there’s a ton there I didn’t experience, and it’s pretty widely acclaimed, so I’m not passing judgement. But what little I saw didn’t work for me at all.

Gintama takes some investment. The beginning is a bit hokay but the story line gets serious as time progresses. It also gains a huge cast of characters as well.
It also has a live adaptation that is said to be pretty good. I haven’t watched it myself yet.
Watching Overlord season 4 on Disney Plus. Still funny, easy watching.

Uh, are we talking about the series where the protagonist and his minions regularly kidnap, torture, and murder innocent people by the thousands?
I’m not sure if he tortures? The protagonist seems to be generally good although the recent episodes seem to make him a little genocidal.

Overlord is a bit hard to understand at times. Usually the MC tries to mitigate the damage his evil underlings do but at other times he goes along. I suspect that it might be because he thinks of it a a game so NPCs are not worth worrying about (maybe - even though at other times he thinks of them as real people).
This is opposed to Overgeared where the MC does treat the NPCs as real people and it is the MCs best quality (his treatment of NPCs ultimately rewards him with his growth as a character). Overgeared is a Korean Light Novel series that is awesome and also has a manga/manwha version - no anime). Though in the beginning of the story he is a character that you will despise. You have to read for about 90 chapters for his character to morph into something great BUT the payoff is wonderful (they are not long chapters so it sounds worse than it is).
If you like MMO type story (LITRPG/Gamelit/Progression) you owe it to yourself to give Overgeared a try. I hope it would get an anime one day.

Making my way through Monster and really enjoying it. A grounded and adult psychological thriller that isn’t like anything I’ve watched. Definitely a slow burn (whole chunks of episodes without the main protagonist, not a lot of action). Good music and dubbing too.
I watched the first episode of Akiba Maid War and I sensed my sanity slipping. It’s basically what if maids from cafes were like yakuza?
And to be honest, beyond the shock of such a mix, I’m not sure if there is anything good beyond that gimmick.
