I realize this would be very subjective, I but I really like the fonts - but I’ve only seen them in screenshots and streams so far.
One of the things I saw in a stream of the game was a header with a general list of supplies/stocks at the top. Like this (and thanks @Quaro for the link to a delightful stream):

Is this an options setting or do I need to make like a manager and office and what not and then it will appear? I plan on watching the previous 2 episodes (and more to get a good understanding of the game) but I assumed that was going to be the default header.
Maybe it depends on the resolution you are playing at?
Yes, I agree - fonts are probably going to be subjective. I hope that modding this game would be possible. Having the community create tools to enhance the experience would be awesome.
That did it! Although specifically I had to change the “Maximum interface width” to match my screen width (2560)
Have the creators said how updates will work going forward? I get that the brothers have obsessively and constantly been working on the game for almost two decades, but my question is more about the branching of versions. Will the Steam/Itchio version be a side gig, with the free version continuing to be the “prime” code? Will there be a lag in updates between the two versions?
That was the very question I was pondering as well.

Not just mods, it apparently has Workshop integration. Sweet!

I just worry that eventually, the two-man studio will get overwhelmed with version updates and the Steam build will lag.

I did the rather brief tutorial and read all the help. In the spot the tutorial planted me in I can’t see to find any soil to plant things in and I didn’t even realize for the longest time how to get more than one guy mining I decided to generate a new world. decided to run the 250 year history option for whatever effect that has and I had to share this event.
