Huge improvement over Oblivion. Still, is every race now on steroids? It sort of bugged me that there weren’t many different body types in previous games (or many variations in height). Doesn’t anyone ever get fat in this universe? But now it seems everyone’s been hitting the gym.

Faces look similar within race types, too. Elves look similar, humans look similar. Even with the lousy face models in previous games each race was pretty unique.
I’m guessing that it’d be less common in a world with little technology where most professions involve manual labor of some kind.
Maybe you can make a fat character? A fat old cat thief would actually be quite amusing.

Sure they did. Bad teeth and gums, scars, a wide variety of skin diseases, untreated goiters, smallpox, no cosmetic surgery for harelip … There was a wide variety in how people looked. It just wasn’t pretty.

But really, you have varying classes in the game too. There should be a few wealthy Imperials who sit around and get fat while their Argonian wenches do all the house and field work.
Just the same, the beggars all looked like everbody else.
Oh and I’m not REALLY complaining, the game looks great so far and for the second time this year it’s making me want to play some Oblivion. And so I shall.
I can see an argument for Skyrim not looking significantly better than Fallout 3, but Oblivion? Seriously? Let’s compare. All shots are taken from the official sites, to ensure that it’s all vanilla game engine (no mods), and also because we can be certain that Bethesda won’t post shots unless they feel that it’s showing their game at its best. I tried to find similar shots for each comparison. Warning: all your h-scroll are belong to us.
So, yeah. It’s not even close. Skyrim looks worlds better.
There’s also a very important factor that people tend to forget: genetics. Populations were very homogeneous throughout history, with certain events causing genetic drift and even invasions being homogenized within 2-3 generations.
Highly variable phenotypes within certain populations only became prevalent post 1700 when large scale human migration began.
Back to the game, and here’s something I haven’t read anywhere yet: fishing. Is there fishing in Skyrim? I’ve seen some pieces of salmon in an inventory somewhere but are there fishing canes or is fishing a “swing sword at fish, collect loot” thingie?

The lighting engine looks worlds better.
It definitely looks better. Huzzah for higher-res heightmaps and no more ground that looks like Play-Doh!
But it’s not Morrowind vs. Oblivion better … which is perfectly in sync with the rest of the industry. We’re just in an age of diminishing returns in graphics.
It’s running on the same hardware. That does have an effect you know.
