Regarding timing I think the administration is trying to have its cake and eat it too. I think they would like this to go to a vote in the Senate immediately so McConnell can sweep it under the rug and they can change the narrative to “The Dems tried to impeach Trump but he was exonerated.” The longer thIs drags on the more wrong doing will come to light, the more public opinion will shift against them, the more pressure there will be on Senate Republicans to support removal. Hell, just trying to get this buried before any more of their crimes come to light is motivation enough to want it over and done with.
At the same time, they can’t cooperate with the investigation without further damning themselves but by refusing to cooperate they’re dragging the process out. Perhaps that’s what’s behind the Sonderland reversal — They’d rather have him teststify with a bunch of misinformation and propaganda than fight testifying and drag things out. This strategy will sadly be more effective than simply stonewalling. They’ll try to control the narrative.
I think ideally they’d like it voted on and sent to the Senate before they have to testify though. Stonewall while pushing for a fast vote to make their stonewalling irrelevant.
Could be, but I lean toward the more obvious explanation: Sondland’s own lawyer is better than the WH hacks, and his lawyer told him he had real legal exposure if he ignored a subpoena.

If Rudy gives up evidence that directly leads to Trump out of office I will give him a medal that says HERO.
I wouldn’t be surprised if Soon Rudy starts to see his options narrowing to a) squeal, b) suicide, c) be ‘suicided’.

I doubt that Rudy (or Trump) has enough functional brain cells left to “know” anything that will be useful as evidence. Rudy can’t tell fantasy from reality and would be a terrible witness.
