They level with the class level unless you take Boon Companion, then they level with the character level.
On my last run with Seelah I took a monk dip for Crane Stance. At level 20, her mount was level 19, because she had 19 levels as a paladin. I didn’t think it was worth blowing a feat to increase the mount by one level.
