I should mention that the previous occasion where I made pork ribs, I was not at all happy with them, as they weren’t cooked long enough. It was the one time that Meathead Goldwyn’s book led me astray. These were much, much better. Probably could have come off the heat a little earlier, but much better than being tough.

One last little shot of the Venezuelan cuisine: added in a corn pancake, AKA, a cachapa, made of ground up canned corn, masarepa corn flour, salt, egg, and butter, fried in more butter, then stuffed to the gills with crumbled queso fresco.

I think I made my batter wrong, because the cake crumbled when I tried to flip it, but despite looking like shit, it was still delicious.

I’d probably never have heard of Arepas if I hadn’t seen them on TripleD.

As for the smoker, the legs do fold up for easy transport.

In my case, there’s a little joint locally, Guasaca (named for a very tasty Venezuelan sauce) that serves up yellow-and-white-corn arepas with all sorts of stuffable goodies pretty cheap. An ex-coworker/common lunchbuddy of mine was all about it and eventually dragged me out there. . . it’s all history from there :-D

I like that it’s familiar, yet different. Not to mention versatile. You can put whatever you like in them.

Where did you get the plantains? The last ones I tried from Around the World weren’t good.

I actually like the ones from ATW if I’m looking for really firm, green, unsweetened ones (great for plantain curry). But the ones used here were from Harris Teeter. The one by the Walmart and TGI Friday off Kildaire in Cary.

Glad to hear, I wish I could take credit. I’m dating someone who throws things together and makes it look easy.

I have a big BOOS chopping block that I love. My only regret was not getting an end-cut piece, but oh well. My girlfriend has much smaller wood and plastic things and until moving in with me, used to put those in the dishwasher. I cried when I heard her say that. At any rate, I had to actually show her how to clean one in place.

After googling BOOS chopping boards I can’t imagine even putting one in a dishwasher ;)

Note: The thick LDPE and HDPE plastic chopping boards used by professional kitchens are often intended to go in commercial dishwashers for sanitisation purposes. I can’t get my set in the dishwasher as they’re so wide and tall!

But most of the cheap plastic ones I’ve seen people using are awful and warp and yet they persist in putting them in the dishwasher because giving them a bit of a scrub is ‘too much work’ :’(

Oops, my bad. I meant to say she just put the cutting boards at her place in the dishwasher. She was baffled on how to clean mine after moving in and when I asked why, she gave her story on the dishwasher. I showed her different methods pretty quickly. She still doesn’t like to clean mine and will bread out a plastic one to put over the wood block.

How do actual butchers clean butcher block I wonder? Gotta be a significant amount of work each day for sure.

Real butchers use an industrial sanitizing solution. The home user can use undiluted white vinegar. Leave it on to soak for a good while and then clean with paper towels. Use a bench scraper to remove solids.

I have an adorable Pac-Man wooden cutting board, that I never use for fear of cleaning and/or damaging it.
