Another one to cross off the list

First time I’ve made, or even tried a lime meringue pie. Filling didn’t set properly, but after a while in the freezer it was decent. Nice, tart taste though.

The pie looks amazing, but the individual slice kinda looks like a filet of sole.

Not that I could do any better.

Roasted pork tenderloin and rice with an odd tomato-and-sour cream sauce. Not too crazy about the sauce, but the pork was divine - I might have a tenderloin sandwich for lunch in a minute here.

Pork tenderloin is great. I went camping once, and prepped the pork to marinade on the drive out. Got there, pulled it out, grilled it quick, delicious.

Tonight for dinner, I got some “country style boneless pork ribs” from Whole Foods. I have never cooked them before, but the fact that they have nothing to do with real ribs cracks me up. I’ll grill them with a dry rub, i think.

Can a slow cooker be useful for dishes not involving meat? My mother sent me a crock pot, which is lovely, except that I really don’t cook with meat and therefore have no idea what to do with it.

Legumes.

You could use it to cook proper pinhead oatmeal overnight, like AB recommends.

My mom made pork with apples and potatoes and stuff in her slow cooker for me, and the apples and whatnot were great. I think they would have been equally great absent the pork.

Country style ribs are fatty and almost too rich for me. Didn’t have any bbq sauce, so i tried to make some, then didn’t have any ketchup or tomato paste, so… Mustard based!

Not bad. Grilled em slowly.

I made some turkey jambalaya but instead of turkey I used shrimp. And instead of straight Andouille sausage, I found this chicken Andouille. For some reason, it came out much sweeter than it does with normal sausage and turkey. Kids liked it, which is all that really matters. But I want a good jambalaya recipe that’s low fat and spicy, not sweet.

Funny you should mention this, because I tried this last night. I doubled the recipe because I know my CrockPot I bought last year at costco likes to burn stuff. It burned it anyway and reduced everything to mush on low at 8 hours. Since I like 8 hours of sleep when I can get it, this sorta kills the overnight convenience bit.

Still wasn’t bad, but I want more texture than pure mush - even from oatmeal.

Probably just need a new slow cooker. Outside of a Taco Soup recipe I found nothing turns out well from the thing.

Also made a spicy beef nacho recipe I found on cooks illustrated tonight. Never going to eat store bought salsa or guacamole again that’s for sure. CI pretty much has a flawless record with me so far, though I wish I would have used more of that awesome spicy beef on the nachos.

Poached my first two eggs today. Ate them on toast with a little coarse salt.

Not very interesting, I know, but considering all I could do with eggs till recently was scramble them or hard-boil them, it’s a step forward.

Well you can make some eggs Benedict.

Costco? Take that sucker back. Costco has the awesomest return policy on the planet. Yeah it’s been a year, so it’s possible they won’t take it, but it’s worth a shot.

I made Texas style chili with no beans this weekend. It took me about 3 1/2 hours of prep and cooking, but it was worth it!

Toasting the chiles almost set off my over-sensitive fire alarm though. I also made a quick cornbread to go with it, came out a little dry but still tasty.

I’d love the details, when/if you have the time.

The other night I made a simple ragout of potatoes, carrots, onions, garlic, mushrooms and roasted red pepper cooked in broth and white wine. It wasn’t a very satisfying dinner on its own since it lacked a strong source of protein, but it was tasty. I wasn’t thinking, however, and served it over brown jasmine rice like a moron. Starch over starch. Brilliant.

However, I found that by adding a little goat cheese to it, it makes a killer omelet filler.

Damn. Now I want an omelet.

Did lobster tails on the grill for the first time this weekend. Turned out awesome! Can’t really go wrong with butter coated lobster…
