Not my pic but yes, I have been to a Waffle House. My Dad was fond of diners and Waffle house kinda fit when there wasn’t one around. At any rate, short order cooks with open kitchens like this give a rare glimpse at what it’s like. Hectic.

Mmmmm, looks like some sourdough bread with that. So. Good. Sopping up egg yolk with bread is so inherently satisfying.
Yeah. I think I probably posted this in the bread thread, but I make my own sour dough. I think I’m getting a little better at it - it’s not perfect, but we like it well enough. :)
That looks excellent to me, man. Looks like a great crust and crumb. We have one store nearby that makes decent sourdough and several others that fail in some way: too small, too dry, nearly burnt, etc. I’m amazed at some of the product that grocery store bakeries turn out as finished goods.

Those eggs are attached to each other, in a tiny pan. That’s effectively one big egg. Flip two in a bigger pan, where one is at the top of the pan and one is at the bottom.
(I really hope this ends with a dozen free floating eggs being flipped at once.)

Looks like an aluminum or steel pan with a white ceramic coating. And a liberal amount of oil.
The pan would make more of a difference with trying to do a spatula-less flip. If it is any kind of non-stick pan at all, it won’t make much of a difference with regard to flipping it with a spatula. If you’re really having problems, you probably just need a little more oil (or as mentioned, don’t try to blast the eggs with heat, and just wait until the egg properly releases from the pan - early flipping is often the reason people have eggs that stick to pans).
I don’t like eggs.
