Gran Turismo 7 - Welcome back to the race

Okay, sorry if this stuff is general knowledge to everyone in the thread, but I have a couple of questions now that I’ve disappointment-uninstalled Grid Legends.

One: Does Gran Turismo do anything at all to encourage actual careful racing? Or is it perfectly happy to just let people bounce off other cars and railings willy-nilly? Because I was slightly tempted to get this until I read @Rock8man’s post upthread:

No judgment intended about anyone’s playing style, but if this is a viable way to cheese through Gran Turismo 7, I’m absolutely uninterested in it. Yet from some of the other posts here, it sounds like it’s not quite that simple? What does Gran Turismo do these days, if anything, to encourage/reward realistic driving habits?

Two: How well does Gran Turismo play from the cockpit view without relying on the HUD? In other words, is it feasible to play strictly from the cockpit view, with only the dashboard providing information on the car? Is there any incentive to do this?
