Got lucky with my first word choice. Dunce - Wince. I really wanted ounce to be a thing - but already used the u in dunce. Almost went with pince, but decided it wasn’t a real word. Didn’t think of since!

I would be extremely surprised if mince was in the 2500 word set.

Well, you’ve got me on rebus. I’d have bet that wasn’t in there too, so perhaps I’m wrong about this one as well.

Yeah, this may be a case like β€œprick” where I’m too hung up on a rare noun to notice a somewhat more common verb.

maybe the puzzler is a chef?

it most definitely is. Additionally the site is hosted on a British server which makes mince a far more common and likely word to begin with.

Correct me if I’m wrong, because I was late to this, but there’s not been a lot of evidence of a British skew in the words and spellings that are popping up. β€œFavor” in particular seemed to send that message.
